¼ cup sugar
1 cup unsweetened pomegranate juice
½ lemon (optional)


Dissolve sugar and juice in a pan. Boil for 5 minutes. Cool, add lemon juice and bottle. Will keep in the fridge for a month.

Dissolve sugar in hot water. Cool and bottle. Will keep in the fridge for a month. 

Demerara Syrup

1 cup demerara sugar

½ cup hot water


Dissolve sugar in hot water. Cool and bottle. Will keep in the fridge for a month.

1 cup water

2 cups demerara sugar

¼ tsp vanilla extract

¼ salt


Whisk sugar and water over low heat until sugar is completely dissolved. Cool and add vanilla and salt. Bottle. Will keep in the fridge for a month. 

Orgeat (Smuggler's Cove Recipe)

½ lb blanched almonds

2 cups water

2½ cups white sugar (see recipe for exact amount)

¼ tsp rose water

¼ tsp orange blossom water

1 tsp light aged rum


  1. Bring almonds and water to a boil, strain and reserve "almond water." 
  2. Using a food processor, grind almonds to rice size pieces, slowly add "almond water" until it makes a "Cream of Wheat" consistency paste. Let cool. You may have to do this in batches.
  3. Using cheesecloth, strain (squeeze) water out of almond paste and strain again.
  4. Measure liquid and add twice as much sugar.
  5. Over low heat, whisk sugar and almond water until sugar is completely dissolved. Cool
  6. Add rose and orange blossom water and rum. Stir to incorporate any skin that may form on the surface
  7. Strain again and bottle.   

    Will keep in the fridge for a month.
